Houmous

1 can (400g) chickpeas well drained

2 big dollops of Tahini

2tbsp lemon juice

2tbsp olive oil

6 grinds of salt

Whizz all but quarter of the can of chickpeas

Keep tasting while adding more of one thing at a time. Once right add the rest of the chickpeas and whizz literally for a second or so.

While adding for taste note that it takes quite a lot of juice and quite a lot of salt. Add Tahini sparingly as it quickly takes over.
