Ingredients
- 2 tsp Fresh ginger Peeled and grated
- 3 tbsp Medium curry powder
- 1 red chilli – chopped
- 1/2 tsp Salt
- 100 g Mango chutney
- 400 ml Reduced fat Coconut Milk
- 1 Large Onion Peeled and very finely chopped
- Chicken breast – bite-sized
- 1 red pepper sliced
- 1 green pepper – chunked
- 1 tsp Garam Masala
Instructions
- Turn on slow cooker and put the coconut milk in.
- Start prepping ingredients and add as they’re ready
- Put everything APART FROM the Garam Masala into the slow cooker. Give it a good stir.
- Put the lid on and cook on HIGH for 4 hour the LOW until needed (at least 2 hours).
- Brown rice – follow Pilau CBL recipe (with peas)
- Stir in the Garam Masala just before servng. Mix well until everything is coated and softened in the sauce.
